Vegan BBQ Ranch "Chicken" Pasta Salad with Gardein

This meat and dairy free BBQ Ranch Chicken Pasta salad is one of my favorites! It's super healthy and extremely delicious!


INGREDIENTS:


12 oz shell pasta

1 can corn

1 can black beans

1 cup of cherry tomatoes, sliced

1 handful of sliced cucumbers

1 handful of shredded carrots

6 Gardein chicken strips

Optional: Nutritional Yeast and Pumpkin seeds for topping


Dressing: BBQ and Ranch dressing of your choice.

DIRECTIONS:


Cook the pasta according to the directions on the box. Once the noodles are ready, add them to a large mixing bowl. Drain and rinse the can of corn and the can of black beans and add them to the mixing bowl as well. Take a handful of shredded carrots and chopped cucumbers and add them to the bowl as well, along with a cup of cherry tomatoes sliced them into halves. Next, take 6 Garden chicken strips and bake them in the over at 430 degrees F for 16-20 minutes, flipping them once about half way through. After they cool down a bit, chop the chicken strips into bite sized pieces and add them to the mixing bowl. Top off the salad with your ranch and bbq dressings (however much you like) and top with Nutritional Yeast and pumpkin seeds if desired.
