Vegan 4th of July Recipes (Southwestern Pasta Salad, Brownies)

Here are some side dish ideas for this 4th of July!
1) Vegan 4th of July Brownies
1 cup all purpose flour
1 cup coconut sugar
1/3 cup cocoa powder
1/2 tsp salt
1/2 tsp baking powder
1/2 cup water
1/2 cup non-dairy melted butter
1 tsp vanilla extract
Toppings: 1 cup coconut whipped cream, strawberries & blueberries
Instructions: Preheat your over to 350 degrees F and lightly grease the muffin tin. In a large bowl, sift together the flour, sugar, cocoa powder, salt & baking powder. Making a well in the middle, pour in the water, butter and vanilla extract. Stir well and pour the batter evenly into the muffin tins. You can do them bigger or smaller if desired.
Bake for 18-15 minutes, depending on size or desired doneness. The less time, the more fudge like and the more time, the more cupcake like. While the brownies bake, cut up some strawberry slices and get out your coconut whip cream and blueberries.
Take the brownies out of the oven and let them cool completely. This is important -- you an put them in the refrigerator to cool them down quicker. Then you you can add your coconut whip, strawberries and blueberries to complete. Enjoy!
2) Southwestern Pasta Salad
12 oz bowtie pasta of your choosing
1 cup of black beans
1 cup of corn
2 cups of cherry tomatoes (cut in halves)
1 medium avocado (cut in small chunks)
1/2 cup finely cupped cilantro
For the lime dressing:
1 tbsp nutritional yeast
1 tbsp fresh lime juice (the juice from 1 medium lime)
2 tbsp olive oil
1 tbsp white wine vinegar
1 splash of agave syrup
1 tbsp water
2 cloves of minced garlic
salt & pepper
Directions: Cook pasta according to the instructions on the package. In a large mixing bowl, combine all of the ingredients for the pasta salad and stir up well. Then, add the dressing on top and stir it up again. Place the pasta salad in the refrigerator for a couple hours and then it's ready to enjoy!
