Delicious Buffalo Chickpea Sandwich (Vegan, Dairy Free)

If you're craving the flavor of Buffalo, here's a healthy + delicious way to get it!


This recipe contains: chickpeas, carrot, red bell pepper, hummus, hot sauce, salt, black pepper, onion powder, garlic powder, paprika & whole grain bread.

2 (15 ounce) cans of chickpeas

1 medium carrot

1/2 red bell pepper

1/2 cup hummus

3 tbsp of hot sauce

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 teaspoon paprika

4 slices of whole grain bread

Toppings: spinach, tomato & cucumber


In a mixing bowl, mash the chickpeas, leaving a bit of texture. Cut up the carrots and the red peppers and add them to the bowl of smashed chickpeas. Add all of the other ingredients (except the toppings and bread) and give it a good mix. Toast your bread slices. Scoop the desired amount of chickpea mixture onto the sandwiches and top with spinach, cucumber and tomato. Add extra hot sauce if you'd like. Enjoy!
