Cozy Drinks for the Winter Months & Holidays (Vegan)

Warm up this winter with these delicious drinks!


Mulled Spice Apple Cider


Ingredients:

8 cups (2L) apple cider or apple juice

1 orange, thinly sliced

6 cardamom pods, cracked

4 cinnamon sticks

3 whole cloves

1/2 cup fresh cranberries

1 inch piece of ginger, thinly sliced


Directions: Place all ingredients in a large pot and bring to a boil over high heat. Reduce to a simmer, partially cover and left infuse for 30-40 min. Serve warm. Enjoy!



Beetroot Latte


Ingredients:

2 cups (500ml) unsweetened plant based milk

1 steamed beet

2 Medjool dates, pits removed

1 tsp (5ml) pure vanilla extract

1 cinnamon stick

1 Tbsp (15ml) maple syrup


Directions: Combine the plant milk, beet, dates, and vanilla extract in a high-powered blender until smooth. Strain mixture and pour mixture into saucepan. Place on stove on medium-high heat and add in a cinnamon stick Let mixture heat up for about 3 minutes, stir throughout to prevent burning. Feel free to add more maple syrup if you'd like it sweeter. Add to mugs and enjoy!



Vegan Eggnog


Ingredients:

1/2 cup of cashews

2 1/2 cups of almond milk

1 tbsp (15ml) of coconut sugar

1 1/2 tbsp of water 1 tsp (5 ml) of cinnamon

1 tsp (5ml) of nutmeg

1 tsp (5ml) of ground cloves

1 tsp (5ml) of ground cardamom

4 Medjool dates



Directions:

In a medium bowl, cover cashes with almond milk and allow them to soak for 1 hour. Meanwhile, in a small saucepan, combine coconut sugar, water, cinnamon, nutmeg, ground cloves and ground cardamom. Bring the ingredients to a boil until the sugar dissolves, then remove from heat to cool. Once the cashews are done soaking, add them to blender along with almond milk, spiced simple syrup and dates. Blend until smooth and then pour into cups and garnish with Nutmeg. Enjoy!
