Red Pesto Sandwich (Vegan, Trader Joe's)

If you love basil and sun dried tomatoes, this is the sandwich for you!

Ingredients: This recipe is made of sun dried tomatoes, almonds, basil, garlic, lemon juice, nutritional yeast, salt, pepper & the bread of your choosing. Toppings include: cucumber, tomato, avocado & arugula. Exact measurements below:

4 slices of bread

1 cup of sun dried tomatoes

1/2 cup of almonds

1/3 packed cup of fresh basil

2 cloves of garlic (or the equivalent minced garlic)

1 tbsp lemon juice (about 1/2 full lemon)

1 tbsp nutritional yeast

1/2 tsp salt

1/4 tsp or so of freshly cracked pepper


1 baby cucumber

1 tomato

1 avocado

1 handful of arugula


1. Blend everything together but the toppings and the bread in a food processor. If you don't have a food processor (I don't either at the current moment), then use a high quality blender. A food processor is always much better if possible!

2. Lather the pesto generously on to some toasted bread and then top with ripe sliced avocado, cucumber, tomatoes & arugula and enjoy!
