Coconut + Coffee Oatmeal Energy Bowl (Vegan, Trader Joe's_

This bowl is delicious (especially if you love coffee). It's also super easy to make and a great grab and go in the morning. See recipe below!


Ingredients:

This recipe is made of 8 ingredients: rolled oats, unsweetened shredded coconut, banana, Trader Joe's cold brew coffee concentrate, almond butter, cocoa powder, chia seeds & 100% pure maple syrup. Measurements below:


1.5 cups of rolled oats

1/2 cup unsweetened shredded coconut (plus 2 tbsp for topping)

1 ripe banana

4-5 tbsp Trader Joe's cold brew coffee concentrate

1/4 cup almond butter

4 tsp cocoa powder

1/2 tbsp chia seeds

2 tbsp 100% pure maple syrup


Directions:

Blend the rolled oats and the shredded coconut until fine in a food processor.

In a mixing bowl, mash the banana up and add both the oats and shredded coconut. Then add the coffee concentrate, almond butter, cocoa powder, chia seeds & maple syrup. Mix it up really well and pour the mixture in a bowl and top it with shredded coconut and sliced banana coins. Cover the mixture and put in the refrigerator. After half an hour or so, it's ready to enjoy!! :)
