3 Awesome Vegan Sandwiches (Caesar Salad, White Bean & Basil, 5 Ingredient Mediterranean)

These sandwiches are all delicious, pretty easy to make and of course, vegan!


1) Vegan Caesar Salad Sandwich


Ingredients:


Dressing:

1 tbsp hemp seeds

1 tbsp tahini

1 tbsp nutritional yeast

1 tbsp water

1/2 lemon, juiced

2 tsp dijon mustard

salt & pepper


Other Ingredients:

2 leaves of romaine

2 slices of whole grain bread

1/4 of a red onion, chopped


Directions:

Stir up the dressing ingredients in a mixing bowl and add on to your bread. I like to lightly toast mine, but just lightly. Then, add your toppings (the romaine and onion). Cut your sandwich in half and it's ready to eat!



2) Simple 5 Ingredient Mediterranean Sandwich



Ingredients:


1/4 cup hummus

some diced onion

1/3 sliced bell pepper

2 leaves of romaine

2 slices of whole grain bread


Directions: Put the ingredients on your sandwich, slice in half and enjoy! Super easy!



3) White Bean + Basil Avocado Mash Sandwich


Ingredients:


1 heaping tbsp dijon mustard

1 15 oz can of white kidney beans

1 avocado

The juice from 1/2 a lemon

2 tbsp of fresh basil leaves

salt and pepper to taste


Optional toppings:

arugula

tomato slices

2 slices of whole grain bread


Directions:

In a food processor (or blender if you don't have a food processor), put all of your ingredients in, except for the bread, arugula & tomato slices. Blend until well combined. Spread the mixture on to your sandwich and then add the toppings. Slice in half and enjoy!
